Catering Disposables
Are there any kosher recipes you make without a kosher kitchen?
I have relatives coming over tomorrow who keep strick kosher. I do not have a kosher home. I don't want to order catering platters or take out since there are no good kosher take out places nearby and the catering platters are way too expensive. Are there any recipies I can make in my kitchen using kosher ingredients you can get in any standard supermarket that can be done using only disposable cutlery and plates?
Please help. I don't know what I can serve my relatives. 
I like the idea of tuna salad, but how would I boil eggs or potatoes without a kosher pot?
It is acceptable to many people who keep strictly kosher to eat food cooked in an oven or on a grill if it is double wrapped in aluminum foil for the cooking process. I have cooked salmon and vegetables (I like yellow squash and zucchini) in a double wrapped foil pouch - it tastes wonderful and is kosher. Just pile everything in with a bit of olive oil (check that it is kosher) and salt. I would suggest asking them if they hold by that rule since even within kashrut there are people who are stricter than others (milk comes to mind - some people will drink "regular" milk and others will only drink milk that is kolov yisroel).
A cold salad could be a nice too. As long as you check the cans for an acceptable hechsher (such as OU) you could put together a cold salad. I like this one: drain and rinse a can of black beans, a can of corn (also drained), a chopped mango, a chopped red onion, the juice of one lime, a teaspoon of cumin and a bit of salt. I add one jalapeno and a handful of chopped cilantro but those ingredients are ones that people seem to either love or hate. Also, you would need to rinse and carefully check the cilantro for any insects. Allowing it to soak in a bowl of water and then shaking it out and checking for insects under a bright light is usually sufficient.
I imagine your relatives will appreciate the effort you go to to provide them with kosher food - even if it is very simple. I would suggest asking them about what they will eat. They will know that you respect their beliefs and want to make them feel comfortable and well fed.
